Diet – Spinach Dip w/ Vegetables

Serve this chilled spinach dip as a healthy snack with a variety of raw vegetables such as bell pepper strips, zucchini coins, cauliflower and broccoli florets, carrot, celery and jicama sticks.

Ingredients
1 pkg. (10 ounces) frozen chopped spinach, thawed, squeezed dry
1-1/2 C. fat-free sour cream
1 C. fat-free mayonnaise
1 C. fresh mushrooms, chopped
3 green onions, chopped

Directions
In a medium-sized bowl, combine all ingredients. Mix well, cover and refrigerate. Serve chilled with a variety of raw vegetables.

Serving: ½ C, Fat: less than 0g, Calories: 57

Exercising When You’re Sick from Fitness 4 Home Superstore:

It’s no secret that this year’s flu season has been one of the worst ever. The average adult suffers from one to six colds each year and about two-thirds of them are usually upper respiratory infections. Many people wonder if working out when they’re sick has any affect on the severity or length of their cold.

Most experts recommend that if your symptoms are above the neck and you have no fever, it’s probably safe to perform basic exercise. Intensive exercise, however, should be postponed until a few days after cold symptoms have disappeared. If you’re suffering from a severe cold that shows flu-like symptoms such as a fever, extreme tiredness, aching muscles and/or swollen lymph glands, then you should wait at least two weeks before you resume intensive exercise.

In some cases, there are things that you can do to prevent a cold so you can keep your fitness program on track. Here are some tips that help you fight off the flu:

  • Eat a well-balanced diet. The immune system depends on many vitamins and minerals for optimal function. A good rule is to eat 10-15 calories per pound of your desired body weight. If your ideal weight is 120 lbs, then consume 1,200-1,800 calories a day (1,200 for sedentary individuals and 1,800 for extremely active people.)
  • Avoid rapid weight loss. As the old saying goes, “Feed a cold, starve a fever!” Low-calorie diets, long-term fasting and rapid weight loss have been shown to weaken your immune system.
  • Obtain adequate sleep. Major sleep disruption (e.g., three hours less than normal) has been linked to immune suppression. Experts suggest that you try to get at least 8 hours of sleep each night.
  • Avoid over-exercising and chronic fatigue. Keep vigorous workouts and race events as far apart as possible. Stay within your limits and don’t push beyond your ability to recover.
  • Wash your hands frequently. Washing your hands with soap and hot water is often your best prevention method.
  • Avoid putting your hands near your eyes, nose or mouth. Most bacteria and germs are spread from a surface to your hands, then to your face - not by air.
  • Get a flu shot. Do this especially if you have a weakened immune system.
  • Drink more water. In the fall and winter, it is easy to overlook your thirst and get dehydrated. Make sure you consume a minimum of 8 glasses a day.
  • Continue a moderate exercise program. Try to maintain a consistent exercise routine but don’t over-do it. And remember, if you’re suffering from flu-like symptoms, try to wait until they’re over before you go all out.
  • Limit alcohol intake. Alcohol can be dehydrating which, in turn, may decrease your resistance to bacteria.
  • Let yourself rest. If you are less than 100% you will feel better and recover faster if you let yourself rest.

Diet - Quinoa w/ Arugula & Parmesan Cheese

Quinoa (pronounced KEEN-wah), native to Peru, is much like wheat. Its subtle nutty flavor pairs well with a wide range of seasonings. This dish can be served as a side or the main course. To serve this dish as a main course, just double the portions.


Ingredients
1 T. olive oil
½ C. onion, chopped
1 garlic clove, minced
1 C. quinoa
2 ¼ C. vegetable broth
2 C. arugula, chopped and stemmed
1 small carrot, peeled and finely shredded
½ C. fresh shiitake mushrooms, thinly sliced
¼ C. grated Parmesan cheese
½ tsp. salt
¼ tsp. freshly ground black pepper


Directions
In a large saucepan, heat the olive oil over medium heat. Add the onion and sauté until soft and translucent, about 4 minutes. Add the garlic and quinoa and cook for about 1 minute, stirring occasionally. Add the vegetable stock and bring to a boil. Reduce the heat to low and simmer until the quinoa is almost tender to the bite but slightly hard in the center, about 12 minutes. Stir in the arugula, shredded carrot and mushrooms. Simmer until the quinoa turns from white to translucent, about 2 minutes. Stir in the cheese and season with the salt and pepper. Serve immediately.

Serves 6. Fat: 3g, Calories: 147

Diet - Southwestern Wraps

Sometimes, finding something quick and easy for lunch can be a real hassle. Here’s a recipe for something you can throw together in just a few minutes that’s healthy and tastes great: Southwestern Wraps!

Ingredients:

1 C. tomatoes, diced
1 ½ T. fresh cilantro, choped
4 fat-free 10” flour tortillas
1 C. low-fat black bean dip
1 C. chopped lettuce
½ C. finely shredded cheddar cheese
¼ C. reduced-fat sour cream
½ C. salsa


In a small bowl, mix together tomatoes and cilantro. Set aside.


Warm tortillas two at a time in microwave by placing between a paper towel and heating on high for 20 seconds.


Transfer the black bean dip from its package into a microwave-safe bowl. Microwave on high for 1 minute. Stir to make sure the dip is heated through.


To assemble, spread ¼ of the black bean dip on 1 tortilla. Top with ¼ of the lettuce, ¼ of the tomato-cilantro mixture and 2 T. shredded cheese. Fold the sides and the bottom of the tortilla up over the filling, then roll to close. Garnish with 1 T. sour cream and 2 T. salsa. Repeat with the remaining tortillas and serve immediately.

Serving Size: 1 wrap, Fat: 7g, Calories: 357
