Thai Cashew Chicken
Main Ingredients:
Chicken Breast: 1 breast (2 pieces)
Bell Pepper: 3 small (orange, red and yellow: 1 from each)
Celery Sticks: 2
Carrot: 1
Vegetable Oil: 1 tbsp
Chili Peppers: 2-4, crushed
Garlic: 2 cloves, finely chopped
Soy Sauce: 1 tbsp
Oyster Sauce: 2 tbsp
Sugar: 1 tsp
Cashews: 1-2 cups
Directions:
1. cut the chicken breast and peppers in bite sizes (2cm)
2. Slice the celery sticks and finely slice the carrot.
3. Fry the garlic with the oil in a wok or a big frying pan until golden.
4. Add the chilies and fry for 30 seconds.
5. Add the chicken and stir fry until it changes color.
6. Add the vegetables, soy and oyster sauce and sugar.
7. Stir fry until the vegetables are softened a bit but not much.
8. Add the cashews and stir fry until the cashews are softened a bit but not much. Serve on rice.
