Diet - Spinach Frittata

A Frittata is an Italian omelet with cheese, meat or vegetables mixed into the eggs, as opposed to an American omelet that folds the ingredients inside the eggs. This Frittata recipe makes for a special breakfast or an easy dinner!

Ingredients
1 tsp. olive oil
1 clove garlic, minced
3 C. fresh baby spinach
3 eggs
4 egg whites
3/4 tsp. salt
1/4 tsp. pepper
1/2 yellow onion, chopped
1/4 red bell pepper, minced
3/4 lb. red potatoes, peeled and shredded
2 T. fresh basil, chopped
1/4 C. shredded part-skim mozzarella cheese

Directions
Preheat broiler on high and position the rack 4 inches from the top of the oven.

In a large, nonstick frying pan with a flameproof handle, heat 1/2 teaspoon of the olive oil over medium heat. Add the garlic and saute until softened, about 1 minute. Stir in the spinach and cook until it wilts, 1 to 2 minutes. Transfer to a bowl. Set the frying pan aside.

In a bowl, whisk together the whole eggs and egg whites. Stir in 1/4 teaspoon of the salt and the pepper. Set aside.

Return the frying pan to medium heat and heat the remaining 1/2 teaspoon olive oil. Add the onion and saute until soft and translucent, about 4 minutes. Stir in the remaining 1/2 teaspoon salt, the bell pepper and the potatoes and cook until the potatoes begin to brown but are still tender-crisp, 4 to 5 minutes.

Spread the potatoes in an even layer in the pan. Spread the spinach mixture evenly over the potatoes. Sprinkle with the basil. Pour in the beaten eggs and sprinkle evenly with the cheese. Cook until slightly set, about 2 to 3 minutes.

Carefully place the pan under the broiler and broil until the frittata is brown and puffy and completely set, about 3 minutes. Serve immediately.

Diet - Summer Veggie Soup

This recipe for Summer Veggie Soup will help you take care of all those fresh, healthy vegetables you've got lying around. It's very easy to make!

Ingredients
1 T. olive oil
1 yellow onion, chopped
3 cloves garlic, diced
4 plum tomatoes, peeled, seeded and diced
1 T. fresh oregano, chopped
1 tsp. ground cumin
4 C. veggie broth
1 bay leaf
1 carrot, peeled, halved lengthwise, and thinly sliced crosswise
1 yellow bell pepper, seeded and diced
1 zucchini, halved lengthwise and thinly sliced crosswise
1 T. grated lemon zest
2 T. chopped fresh cilantro
salt and pepper to taste

Directions
In a large saucepan, heat the olive oil over medium heat. Add the onion and saute until soft and translucent, about 4 minutes. Add the garlic and saute for 30 seconds; don't let the garlic brown. Add the tomatoes, oregano and cumin and saute until the tomatoes are softened, about 4 minutes. Add the stock and bay leaf and bring to a boil, then reduce the heat to medium low and bring to a simmer. Add the carrot and bell pepper and cook for 2 minutes. Add the zucchini and simmer until the vegetables are tender, about 3 minutes longer. Stir in the lemon zest and cilantro. Season with the salt and pepper. Discard the bay leaf.

Serves: 8, Fat: 2g, Calories: 60

Diet - Fat Free (well... almost) Angel Food Cake

Homemade angel food cake is worth every ounce of work you put into it. It is moist, light, almost fat free and tastes fantastic by itself or with fruit!

Ingredients
1-1/4 C. cake flour
1-3/4 C. sugar
1/4 tsp. salt
1-1/2 C. egg whites
1 tsp. cream of tartar
1/2 tsp. vanilla extract
1/2 tsp. almond extract

Directions
Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract. Sift together flour, sugar, and salt. Repeat five times. Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.

Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.

Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan. Serve alone - or with fresh fruit and sugar free Cool-Whip!

Fitness Tips: Cross Training to Burn Fat and Get in Shape Faster!

Cross training is one of the best workouts for burning fat and getting in shape because it combines a variety of different exercises. Some cross trainers prefer to swim, ride a bike, hike, walk, run, etc. Others choose to use fitness equipment (like the Tuff Stuff CXT-100) that allows them to do more than one exercise on the same machine.

A huge advantage of this form of exercise is that there is less chance for boredom. By doing only one form of exercise, you can easily burn out and get sick of it. By changing up your workout, the routine is always different and boredom is thus avoided.

Diet - Sweet and Sour Mahi Mahi

This Sweet and Sour Mahi Mahi is bursting with flavor! It only takes 30 minutes to prepare (20 minutes are for marinating!) - it's a snap and soooooooooo delicious. You'll love it!

Ingredients


3 T. honey
3 T. soy sauce
3 T. balsamic vinegar
1 T. grated fresh ginger root
1 clove garlic, crushed or to taste
2 tsp. olive oil
4 (6 oz.) mahi mahi fillets
1 T. vegetable oil
salt and pepper to taste

Directions:
In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.

Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.

Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish and serve immediately.
